Ingredients

  • Vegetable broth - 750 ml
  • Canned chickpeas - 240 grams, drained and rinsed
  • Greek yogurt - 100 grams
  • Fresh dill - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook for about 15 minutes until they are soft and caramelized, stirring occasionally.
  2. Add the minced garlic to the pot and cook for an additional 2 minutes until fragrant.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
  4. Stir in the chickpeas and continue to simmer for another 10 minutes to heat through.
  5. Season the soup with salt, black pepper, and lemon juice to taste.
