  • Red lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the diced carrot and celery, cooking for an additional 5 minutes until softened.
  3. Stir in the diced chicken breast and cook until browned on all sides.
  4. Add the red lentils, vegetable broth, bay leaf, and thyme. Bring to a boil, then reduce to a simmer.
  5. Cover and let the soup simmer for about 25 minutes, or until the lentils and chicken are cooked through.
  6. Season with salt, black pepper, and lemon juice to taste. Remove the bay leaf before serving.
