- Chicken breast - 200 grams, diced
- Red lentils - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Vegetable broth - 500 milliliters
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the diced carrot and celery, cooking for an additional 5 minutes until softened.
- Stir in the diced chicken breast and cook until browned on all sides.
- Add the red lentils, vegetable broth, bay leaf, and thyme. Bring to a boil, then reduce to a simmer.
- Cover and let the soup simmer for about 25 minutes, or until the lentils and chicken are cooked through.
- Season with salt, black pepper, and lemon juice to taste. Remove the bay leaf before serving.
- Ladle the soup into bowls and garnish with fresh parsley.
