- All-purpose flour - 200 grams
- Olive oil - 60 ml
- Water - 100 ml
- Salt - 1 teaspoon
- Lentils - 100 grams (cooked)
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Carrot - 1 medium (grated)
- Spinach - 100 grams (fresh or frozen)
- Dried oregano - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add olive oil and mix well until crumbly.
- Gradually add water, kneading until a smooth dough forms. Cover with a cloth and let rest for 20 minutes.
- In a pan, heat a tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Add the grated carrot and spinach to the pan, cooking until the spinach wilts, about 3-5 minutes.
- Stir in the cooked lentils, dried oregano, black pepper, nutritional yeast, and lemon juice. Mix well and remove from heat to cool.
- Preheat the oven to 200°C (390°F).
- Divide the dough into two equal parts. Roll out each part into a thin circle on a floured surface.
- Place one dough circle onto a baking sheet lined with parchment paper. Spoon the lentil and vegetable filling onto one half of the circle, leaving a border.
- Fold the dough over the filling to create a half-moon shape, sealing the edges with a fork.
- Repeat with the second dough circle and filling. Brush the tops with a little olive oil.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
