Ingredients

  • All-purpose flour - 200 grams
  • Olive oil - 60 ml
  • Water - 100 ml
  • Salt - 1 teaspoon
  • Lentils - 100 grams (cooked)
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Carrot - 1 medium (grated)
  • Spinach - 100 grams (fresh or frozen)
  • Dried oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add olive oil and mix well until crumbly.
  2. Gradually add water, kneading until a smooth dough forms. Cover with a cloth and let rest for 20 minutes.
  3. In a pan, heat a tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  4. Add the grated carrot and spinach to the pan, cooking until the spinach wilts, about 3-5 minutes.
  5. Stir in the cooked lentils, dried oregano, black pepper, nutritional yeast, and lemon juice. Mix well and remove from heat to cool.
  6. Preheat the oven to 200°C (390°F).
  7. Divide the dough into two equal parts. Roll out each part into a thin circle on a floured surface.
  8. Place one dough circle onto a baking sheet lined with parchment paper. Spoon the lentil and vegetable filling onto one half of the circle, leaving a border.
  9. Fold the dough over the filling to create a half-moon shape, sealing the edges with a fork.
  10. Repeat with the second dough circle and filling. Brush the tops with a little olive oil.
  11. Bake in the preheated oven for 20-25 minutes or until golden brown.
  12. Remove from the oven and let cool slightly before serving.
