- Couscous - 100 grams

- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Spinach - 50 grams, fresh
- Vegetable broth - 750 ml
- Lemon juice - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and celery, and cook for an additional 3-4 minutes until the vegetables start to soften.
- Add the diced zucchini and dried oregano, and cook for another 2 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes.
- Add the couscous and fresh spinach to the pot, stirring well. Cover and let it cook for an additional 5 minutes, or until the couscous is tender.
- Remove from heat, and stir in the lemon juice. Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
