  • Couscous - 100 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Spinach - 50 grams, fresh
  • Vegetable broth - 750 ml
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced carrot, and celery, and cook for an additional 3-4 minutes until the vegetables start to soften.
  3. Add the diced zucchini and dried oregano, and cook for another 2 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 10 minutes.
  5. Add the couscous and fresh spinach to the pot, stirring well. Cover and let it cook for an additional 5 minutes, or until the couscous is tender.
  6. Remove from heat, and stir in the lemon juice. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh parsley.
