Ingredients

  • Couscous - 100 grams
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a pot, bring 250 ml of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. Fluff the couscous with a fork and let it cool slightly.
  3. In a large bowl, combine the diced cucumber, tomato, red bell pepper, red onion, and chopped parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  5. Add the cooled couscous to the vegetable mixture and pour the dressing over it. Toss everything gently to combine.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
