- Couscous - 100 grams

- Red bell pepper - 1, diced

- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a pot, bring 250 ml of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and let it cool slightly.
- In a large bowl, combine the diced cucumber, tomato, red bell pepper, red onion, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Add the cooled couscous to the vegetable mixture and pour the dressing over it. Toss everything gently to combine.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
