- Zucchini - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1 medium, juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a saucepan, bring the vegetable broth to a boil and add a pinch of salt.
- Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes to absorb the liquid.
- In a large skillet, heat the olive oil over medium heat. Add the red onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the diced red bell pepper and zucchini to the skillet, cooking for another 5-7 minutes until softened.
- Stir in the halved cherry tomatoes, cooking for an additional 2-3 minutes until they start to soften.
- Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.
- Add the lemon juice, chopped parsley, salt, and black pepper, stirring everything together until evenly distributed.
- Serve warm, topped with crumbled feta cheese if desired.
