  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Honey - 10 grams
  • Salt - 5 grams
  • Olive oil - 10 ml
  • Sesame seeds - 30 grams
  • Feta cheese - 100 grams
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped

Steps

  1. In a small bowl, dissolve the active dry yeast and honey in warm water. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  6. Once the dough has risen, punch it down and divide it into two equal pieces. Shape each piece into a bagel-like ring, making sure to pinch the ends to seal.
  7. Dip each ring into a bowl of water, then roll in sesame seeds to coat evenly.
  8. Place the rings on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  9. While the koulouri is baking, crumble the feta cheese and mix it with chopped parsley and black pepper in a small bowl.
