Ingredients
- Lamb shoulder - 300 grams, cubed
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Lemon juice - 2 tablespoons
- Dried oregano - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole wheat pita bread - 2 pieces
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1/2 small, thinly sliced
- Tzatziki sauce - 100 grams
- Fresh parsley - a handful, chopped
Steps
- In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Add the cubed lamb shoulder and marinate for at least 30 minutes.
- Preheat your oven to 180°C (350°F). Spread the marinated lamb on a baking tray and roast for 25-30 minutes until tender and slightly crispy.
- While the lamb is roasting, prepare the vegetables by halving the cherry tomatoes, dicing the cucumber, and thinly slicing the red onion.
- Once the lamb is cooked, remove it from the oven and let it rest for a few minutes.
- Warm the whole wheat pita bread in a dry skillet for about 1 minute on each side until pliable.
- Assemble the wraps by placing a generous portion of roasted lamb in the center of each pita, followed by the fresh vegetables and a dollop of tzatziki sauce.
- Sprinkle with chopped parsley, fold the pita over the filling, and enjoy your healthy Kleftiko Wraps.
