Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat pita bread - 2 pieces
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/2 small, thinly sliced
  • Tzatziki sauce - 100 grams
  • Fresh parsley - a handful, chopped

Steps

  1. In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Add the cubed lamb shoulder and marinate for at least 30 minutes.
  2. Preheat your oven to 180°C (350°F). Spread the marinated lamb on a baking tray and roast for 25-30 minutes until tender and slightly crispy.
  3. While the lamb is roasting, prepare the vegetables by halving the cherry tomatoes, dicing the cucumber, and thinly slicing the red onion.
  4. Once the lamb is cooked, remove it from the oven and let it rest for a few minutes.
  5. Warm the whole wheat pita bread in a dry skillet for about 1 minute on each side until pliable.
  6. Assemble the wraps by placing a generous portion of roasted lamb in the center of each pita, followed by the fresh vegetables and a dollop of tzatziki sauce.
  7. Sprinkle with chopped parsley, fold the pita over the filling, and enjoy your healthy Kleftiko Wraps.
