- Lamb shoulder - 300 grams, cut into cubes
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Potato - 1 medium, diced
- Tomato - 1 medium, diced
- Feta cheese - 50 grams, crumbled
- Greek yogurt - 150 grams
- Fresh dill - 1 tablespoon, chopped
Steps
- Preheat your oven to 160°C (320°F).
- In a large bowl, combine the lamb cubes, olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.
- In a baking dish, layer the diced potatoes and tomatoes on the bottom.
- Add the marinated lamb on top of the vegetables, spreading it evenly.
- Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 1 hour and 15 minutes or until the lamb is tender.
- Once done, remove the dish from the oven and let it rest for 10 minutes.
- Serve the kleftiko in bowls topped with crumbled feta cheese, a dollop of Greek yogurt, and garnished with fresh dill.
