  • Onion - 1 medium, chopped
  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1, sliced
  • Potatoes - 300 grams, diced
  • Lemon juice - 2 tablespoons
  • Oregano - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe dish, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
