Ingredients

  • Lamb shoulder - 500 grams, cut into large chunks
  • Potatoes - 300 grams, peeled and cut into wedges
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 1 sprig, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 milliliters

Steps

  1. In a large bowl, mix the olive oil, lemon juice, minced garlic, rosemary, thyme, oregano, salt, and black pepper to create a marinade.
  2. Add the lamb chunks to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your oven to 160°C (320°F).
  4. In a large baking dish, arrange the marinated lamb chunks and scatter the potato wedges around them.
  5. Pour the water into the baking dish, cover it tightly with aluminum foil, and bake for 1.5 hours.
  6. After 1.5 hours, remove the foil and increase the oven temperature to 200°C (392°F). Cook for an additional 30 minutes, or until the lamb is tender and the potatoes are golden brown.
  7. Remove from the oven and let it rest for 10 minutes before serving.
