Ingredients

  • Lamb shoulder - 500 grams, cut into large chunks
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Oregano - 2 teaspoons, dried
  • Thyme - 2 teaspoons, dried
  • Rosemary - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon zest - 1 teaspoon
  • Feta cheese - 50 grams, crumbled (for serving)
  • Fresh parsley - for garnish

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, rosemary, salt, black pepper, and lemon zest to make a marinade.
  2. Add the lamb chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your BBQ grill or oven to medium-high heat.
  4. Remove the lamb from the marinade and thread the chunks onto skewers, leaving some space between each piece.
  5. Grill the lamb skewers for about 15-20 minutes, turning occasionally, until the meat is browned and cooked to your desired doneness.
  6. Once cooked, remove the skewers from the grill and let them rest for a few minutes.
  7. Serve the lamb with crumbled feta cheese and garnish with fresh parsley.
