Ingredients

  • Lamb shoulder - 500 grams
  • Garlic cloves - 4, minced
  • Fresh rosemary - 2 tablespoons, chopped
  • Fresh thyme - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled (for serving)
  • Zucchini - 200 grams, sliced (for serving)

Steps

  1. Preheat your BBQ grill to medium heat.
  2. In a large bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, salt, and black pepper to create a marinade.
  3. Cut the lamb shoulder into large chunks and add it to the marinade, ensuring all pieces are well coated. Cover and marinate for at least 1 hour, preferably overnight in the refrigerator.
  4. After marinating, thread the lamb pieces onto skewers, leaving a little space between each piece.
  5. Place the skewers on the preheated BBQ grill and cook for about 15-20 minutes, turning occasionally, until the lamb is charred on the outside and cooked to your desired doneness (internal temperature of 60°C for medium).
  6. While the lamb is cooking, grill the zucchini slices for about 3-4 minutes on each side until tender and slightly charred.
  7. Once cooked, remove the lamb skewers from the grill and let them rest for 5 minutes before serving.
  8. Serve the lamb skewers topped with crumbled feta cheese alongside the grilled zucchini.
