Ingredients
- Lamb shoulder - 300 grams, cut into chunks
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Lemon juice - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 milliliters
- Eggs - 4 large
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 160°C (320°F).
- In a large oven-safe pot, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the lamb chunks to the pot and brown on all sides, approximately 5-7 minutes.
- Once the lamb is browned, add the lemon juice, dried oregano, salt, black pepper, and water to the pot. Stir to combine.
- Cover the pot with a lid or aluminum foil and transfer it to the preheated oven. Cook for 60 minutes until the lamb is tender.
- After 60 minutes, remove the pot from the oven and crack the eggs on top of the lamb. Sprinkle crumbled feta cheese over the eggs.
- Return the pot to the oven and bake for an additional 10-12 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Remove from the oven, garnish with chopped fresh parsley, and serve warm.
