Ingredients

  • Lamb shoulder - 300 grams, cut into chunks
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 100 milliliters
  • Eggs - 4 large
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large oven-safe pot, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the lamb chunks to the pot and brown on all sides, approximately 5-7 minutes.
  4. Once the lamb is browned, add the lemon juice, dried oregano, salt, black pepper, and water to the pot. Stir to combine.
  5. Cover the pot with a lid or aluminum foil and transfer it to the preheated oven. Cook for 60 minutes until the lamb is tender.
  6. After 60 minutes, remove the pot from the oven and crack the eggs on top of the lamb. Sprinkle crumbled feta cheese over the eggs.
  7. Return the pot to the oven and bake for an additional 10-12 minutes, or until the egg whites are set but the yolks are still slightly runny.
  8. Remove from the oven, garnish with chopped fresh parsley, and serve warm.
