Ingredients

  • Zucchini - 200 grams
  • Eggplant - 200 grams
  • Red bell pepper - 1 medium
  • Red onion - 1 medium
  • Garlic - 3 cloves
  • Cherry tomatoes - 150 grams
  • Olive oil - 4 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Feta cheese - 100 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Wash and chop the zucchini, eggplant, and red bell pepper into bite-sized pieces.
  3. Peel and slice the red onion into wedges and mince the garlic cloves.
  4. In a large mixing bowl, combine the chopped vegetables, cherry tomatoes, minced garlic, olive oil, oregano, salt, and black pepper. Toss until the vegetables are well coated.
  5. Transfer the vegetable mixture to a baking dish, spreading it evenly.
  6. Drizzle the lemon juice over the top of the vegetables.
  7. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 45 minutes.
  8. Remove the foil and sprinkle crumbled feta cheese over the roasted vegetables.
  9. Return the dish to the oven and bake uncovered for an additional 15 minutes, until the cheese is slightly golden.
  10. Garnish with chopped fresh parsley before serving.
