Ingredients
- Zucchini - 200 grams
- Eggplant - 200 grams
- Red bell pepper - 1 medium
- Red onion - 1 medium
- Garlic - 3 cloves
- Cherry tomatoes - 150 grams
- Olive oil - 4 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Feta cheese - 100 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 180°C (350°F).
- Wash and chop the zucchini, eggplant, and red bell pepper into bite-sized pieces.
- Peel and slice the red onion into wedges and mince the garlic cloves.
- In a large mixing bowl, combine the chopped vegetables, cherry tomatoes, minced garlic, olive oil, oregano, salt, and black pepper. Toss until the vegetables are well coated.
- Transfer the vegetable mixture to a baking dish, spreading it evenly.
- Drizzle the lemon juice over the top of the vegetables.
- Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 45 minutes.
- Remove the foil and sprinkle crumbled feta cheese over the roasted vegetables.
- Return the dish to the oven and bake uncovered for an additional 15 minutes, until the cheese is slightly golden.
- Garnish with chopped fresh parsley before serving.
