Ingredients

  • Eggplant - 150 grams
  • Zucchini - 150 grams
  • Red bell pepper - 100 grams
  • Potato - 100 grams
  • Garlic - 2 cloves
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Parchment paper - 2 sheets

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and chop the eggplant, zucchini, red bell pepper, and potato into bite-sized pieces.
  3. In a mixing bowl, combine the chopped vegetables, minced garlic, lemon juice, olive oil, oregano, salt, and black pepper. Toss until well coated.
  4. Cut two sheets of parchment paper large enough to fold over and seal the vegetable mixture.
  5. Divide the vegetable mixture evenly onto the center of each parchment sheet.
  6. Sprinkle the chopped parsley over the top of the vegetables.
  7. Fold the parchment paper over the vegetables to create a sealed packet, ensuring no steam escapes.
  8. Place the packets on a baking tray and bake in the preheated oven for 25-30 minutes until the vegetables are tender.
  9. Remove from the oven, let cool slightly, and then carefully open the packets to release the steam.
  10. Serve warm as a snack or appetizer, and enjoy!
