- Eggplant - 150 grams
- Zucchini - 150 grams
- Red bell pepper - 100 grams
- Potato - 100 grams
- Garlic - 2 cloves
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Parchment paper - 2 sheets
Steps
- Preheat the oven to 180°C (350°F).
- Wash and chop the eggplant, zucchini, red bell pepper, and potato into bite-sized pieces.
- In a mixing bowl, combine the chopped vegetables, minced garlic, lemon juice, olive oil, oregano, salt, and black pepper. Toss until well coated.
- Cut two sheets of parchment paper large enough to fold over and seal the vegetable mixture.
- Divide the vegetable mixture evenly onto the center of each parchment sheet.
- Sprinkle the chopped parsley over the top of the vegetables.
- Fold the parchment paper over the vegetables to create a sealed packet, ensuring no steam escapes.
- Place the packets on a baking tray and bake in the preheated oven for 25-30 minutes until the vegetables are tender.
- Remove from the oven, let cool slightly, and then carefully open the packets to release the steam.
- Serve warm as a snack or appetizer, and enjoy!
