- Lamb shoulder, boneless - 300 grams
- Olive oil - 2 tablespoons
- Onion, chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Potato, diced - 1 medium
- Zucchini, diced - 1 medium
- Tomato, chopped - 1 large
- Vegetable broth - 500 milliliters
- Oregano, dried - 1 teaspoon
- Thyme, dried - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
- Add the diced lamb shoulder to the pot and brown it on all sides, about 5-7 minutes.
- Stir in the diced carrot, potato, and zucchini, cooking for another 5 minutes.
- Add the chopped tomato, vegetable broth, dried oregano, dried thyme, salt, and black pepper. Bring the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let it cook for 30 minutes until the lamb is tender and the vegetables are cooked through.
- Stir in the lemon juice before serving. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
