  • Lamb shoulder, boneless - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Potato, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Tomato, chopped - 1 large
  • Vegetable broth - 500 milliliters
  • Oregano, dried - 1 teaspoon
  • Thyme, dried - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-5 minutes.
  2. Add the diced lamb shoulder to the pot and brown it on all sides, about 5-7 minutes.
  3. Stir in the diced carrot, potato, and zucchini, cooking for another 5 minutes.
  4. Add the chopped tomato, vegetable broth, dried oregano, dried thyme, salt, and black pepper. Bring the mixture to a simmer.
  5. Reduce the heat to low, cover the pot, and let it cook for 30 minutes until the lamb is tender and the vegetables are cooked through.
  6. Stir in the lemon juice before serving. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.
