Ingredients

  • Potatoes - 500 grams, peeled and cut into wedges
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh oregano - 1 tablespoon, chopped (or 1 teaspoon dried)
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Feta cheese - 30 grams, crumbled (optional)

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a large bowl, combine the olive oil, minced garlic, fresh oregano, lemon juice, salt, black pepper, and paprika.
  3. Add the potato wedges to the bowl and toss until they are evenly coated with the marinade.
  4. Transfer the seasoned potatoes to a baking dish and spread them out in an even layer.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are golden and tender.
  7. If using, sprinkle crumbled feta cheese on top before serving.
