  • Pizza dough - 200 grams
  • Lamb shoulder, diced - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Lemon juice - 1 tablespoon
  • Oregano, dried - 1 teaspoon
  • Thyme, dried - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes, halved - 100 grams
  • Red onion, thinly sliced - 50 grams
  • Feta cheese, crumbled - 50 grams
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a bowl, marinate the diced lamb with olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Let it sit for 15 minutes.
  3. Roll out the pizza dough on a floured surface to your desired thickness, and place it on a baking tray lined with parchment paper.
  4. Spread the marinated lamb evenly over the pizza dough.
  5. Top the lamb with halved cherry tomatoes and sliced red onion.
  6. Bake in the preheated oven for 20-25 minutes or until the lamb is cooked through and the edges of the dough are golden brown.
  7. Remove the pizza from the oven and sprinkle crumbled feta cheese and chopped parsley on top.
