- Red onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a medium bowl, whisk the eggs until well combined. Season with salt, pepper, and oregano.
- Heat the olive oil in a non-stick skillet over medium heat. Add the chopped red onion and sauté until translucent, about 3 minutes.
- Add the diced tomato and spinach to the skillet, cooking for another 2-3 minutes until the spinach is wilted.
- Pour the whisked eggs over the sautéed vegetables in the skillet. Cook for 2-3 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
