  • Red onion - 1 small, finely chopped

  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a medium bowl, whisk the eggs until well combined. Season with salt, pepper, and oregano.
  2. Heat the olive oil in a non-stick skillet over medium heat. Add the chopped red onion and sauté until translucent, about 3 minutes.
  3. Add the diced tomato and spinach to the skillet, cooking for another 2-3 minutes until the spinach is wilted.
  4. Pour the whisked eggs over the sautéed vegetables in the skillet. Cook for 2-3 minutes, gently lifting the edges with a spatula to allow uncooked egg to flow underneath.
