- Lamb shoulder - 400 grams, cut into large chunks
- Olive oil - 2 tablespoons

- Lemon juice - 2 tablespoons
- Oregano - 2 teaspoons, dried
- Rosemary - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Potatoes - 2 medium, peeled and cut into wedges
- Onion - 1 medium, quartered
- Carrots - 1 medium, sliced
- Vegetable broth - 250 milliliters
Steps
- Preheat the oven to 160°C (320°F).
- In a large bowl, combine the lamb chunks with olive oil, minced garlic, lemon juice, oregano, rosemary, salt, and black pepper. Mix well to coat the lamb evenly.
- Add the potatoes, onion, and carrots to the bowl and toss to combine with the lamb mixture.
- Transfer the lamb and vegetables to a large, oven-safe dish. Pour the vegetable broth over the top.
- Cover the dish tightly with aluminum foil to seal in the moisture.
- Place the dish in the preheated oven and cook for 2.5 to 3 hours, or until the lamb is tender and easily pulls apart with a fork.
- Remove from the oven and let it sit for 10 minutes before serving. Serve warm, drizzling some of the cooking liquid over the lamb and vegetables.
