Ingredients

  • Lamb shoulder - 500 grams, cut into large chunks
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 sprigs, leaves removed
  • Fresh thyme - 2 sprigs, leaves removed
  • Lemon - 1, juiced and zested
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red onion - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Feta cheese - 100 grams, crumbled (optional for serving)
  • Olives - 50 grams, pitted (optional for serving)

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a large mixing bowl, combine the lamb chunks with minced garlic, rosemary, thyme, lemon juice, lemon zest, olive oil, salt, and black pepper. Mix well to ensure the lamb is evenly coated.
  3. In a large oven-safe pot or Dutch oven, arrange the sliced red onion and bell pepper at the bottom.
  4. Place the marinated lamb on top of the vegetables, spreading it out evenly.
  5. Cover the pot with a lid or aluminum foil to ensure the lamb remains moist during cooking.
  6. Transfer the pot to the preheated oven and let it cook for approximately 2 hours, or until the lamb is tender and easily pulls apart with a fork.
  7. Once cooked, remove from the oven and let it rest for 10 minutes before serving.
  8. Serve the Kleftiko Lamb garnished with crumbled feta cheese and olives, if desired.
