Ingredients

  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh oregano - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped red onion until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the halved cherry tomatoes, crumbled feta cheese, oregano, salt, and pepper. Cook for about 5 minutes, allowing the tomatoes to soften.
  5. Transfer the mixture to a greased baking dish, spreading it evenly.
  6. Make four small wells in the mixture and crack an egg into each well.
  7. Sprinkle the top with chopped parsley.
  8. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny.
  9. Remove from the oven and let it cool for a minute before serving.
