- Eggs - 4 large
- Feta cheese - 100 grams, crumbled
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh oregano - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped red onion until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the halved cherry tomatoes, crumbled feta cheese, oregano, salt, and pepper. Cook for about 5 minutes, allowing the tomatoes to soften.
- Transfer the mixture to a greased baking dish, spreading it evenly.
- Make four small wells in the mixture and crack an egg into each well.
- Sprinkle the top with chopped parsley.
- Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny.
- Remove from the oven and let it cool for a minute before serving.
