- Chicken thighs - 400 grams
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 4 cloves, minced
- Dried oregano - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Potatoes - 300 grams, cut into wedges
- Carrots - 150 grams, sliced
- Red onion - 1 medium, quartered
- Cherry tomatoes - 150 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken thighs and coat well. Cover and marinate for at least 30 minutes in the refrigerator.
- Preheat your oven to 180°C (350°F).
- In a baking dish, arrange the marinated chicken thighs. Scatter the potato wedges, sliced carrots, quartered red onion, and cherry tomatoes around the chicken.
- Drizzle any remaining marinade over the vegetables and chicken. Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 60 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is golden and the vegetables are tender.
- Once done, garnish with fresh parsley before serving.
