Ingredients

  • Lamb shoulder, boneless - 200 grams
  • Olive oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Lemon juice - 1 tablespoon
  • Oregano, dried - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat tortillas - 2 units
  • Spinach, fresh - 50 grams
  • Tomato, diced - 1 medium
  • Feta cheese, crumbled - 50 grams
  • Red onion, thinly sliced - 1/4 unit
  • Cucumber, sliced - 1/2 unit
  • Tzatziki sauce - 4 tablespoons

Steps

  1. Preheat the oven to 150°C (300°F).
  2. In a bowl, combine the olive oil, minced garlic, lemon juice, oregano, salt, and black pepper to create a marinade.
  3. Place the lamb shoulder in a baking dish and pour the marinade over it, ensuring the meat is well coated.
  4. Cover the dish with foil and roast in the preheated oven for about 1 hour or until the lamb is tender and easily shredded.
  5. Once cooked, remove the lamb from the oven, let it cool slightly, then shred it with two forks.
  6. Warm the whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. To assemble the wraps, layer fresh spinach, diced tomato, shredded lamb, crumbled feta, sliced red onion, and cucumber on each tortilla.
  8. Drizzle tzatziki sauce over the fillings, then roll the tortilla tightly to enclose the ingredients.
  9. Slice the wraps in half and serve immediately.
