- Lamb shoulder, boneless - 200 grams
- Olive oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Lemon juice - 1 tablespoon
- Oregano, dried - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat tortillas - 2 units
- Spinach, fresh - 50 grams
- Tomato, diced - 1 medium
- Feta cheese, crumbled - 50 grams
- Red onion, thinly sliced - 1/4 unit
- Cucumber, sliced - 1/2 unit
- Tzatziki sauce - 4 tablespoons
Steps
- Preheat the oven to 150°C (300°F).
- In a bowl, combine the olive oil, minced garlic, lemon juice, oregano, salt, and black pepper to create a marinade.
- Place the lamb shoulder in a baking dish and pour the marinade over it, ensuring the meat is well coated.
- Cover the dish with foil and roast in the preheated oven for about 1 hour or until the lamb is tender and easily shredded.
- Once cooked, remove the lamb from the oven, let it cool slightly, then shred it with two forks.
- Warm the whole wheat tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- To assemble the wraps, layer fresh spinach, diced tomato, shredded lamb, crumbled feta, sliced red onion, and cucumber on each tortilla.
- Drizzle tzatziki sauce over the fillings, then roll the tortilla tightly to enclose the ingredients.
- Slice the wraps in half and serve immediately.
