Ingredients

  • Lamb shoulder - 300 grams, cut into chunks
  • Garlic - 3 cloves, minced
  • Lemon - 1, juiced and zested
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Potato - 1 medium, diced
  • Cherry tomatoes - 100 grams, halved
  • Eggs - 4 large
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, combine the lamb chunks with minced garlic, lemon juice, lemon zest, olive oil, dried oregano, salt, and black pepper. Mix well and let it marinate for at least 30 minutes.
  3. In an oven-safe pot or Dutch oven, add the marinated lamb and diced potato. Cover with a lid or foil and bake for 1 hour.
  4. After 1 hour, add the cherry tomatoes to the pot and bake uncovered for an additional 15 minutes.
  5. While the lamb is finishing, bring a pot of water to a gentle simmer. Crack the eggs into individual cups and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes until whites are set but yolks remain runny.
  6. Once the lamb is cooked and tender, remove it from the oven and let it rest for a few minutes. Serve the lamb and potatoes on plates, topped with poached eggs, crumbled feta cheese, and chopped parsley.
