Ingredients

  • Potatoes - 200 grams, diced
  • Carrots - 100 grams, sliced
  • Zucchini - 100 grams, sliced
  • Red bell pepper - 1 medium, chopped
  • Red onion - 1 medium, quartered
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Oregano - 1 teaspoon, dried
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Pita bread - 2 pieces

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the diced potatoes, sliced carrots, zucchini, red bell pepper, and red onion.
  3. Add the minced garlic, olive oil, lemon juice, oregano, thyme, salt, and black pepper to the bowl. Toss everything together until the vegetables are well coated.
  4. Transfer the vegetable mixture to a baking dish and spread it out evenly.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the vegetables are tender and slightly golden.
  7. Once done, take it out from the oven and let it cool for a few minutes.
  8. Serve the roasted vegetables topped with crumbled feta cheese and chopped parsley, alongside warm pita bread.
