Ingredients
- 2 large bell peppers (any color) - 300g
- 2 medium tomatoes - 250g
- 200g cauliflower rice (fresh or frozen)
- 50g feta cheese, crumbled
- 30ml olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried mint
- Salt to taste
- Pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat 15ml of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the cauliflower rice to the skillet and cook for 5-7 minutes until slightly tender.
- Dice the tomatoes and add them to the skillet along with dried oregano, dried mint, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
- Remove the skillet from heat and mix in the crumbled feta cheese.
- Stuff each bell pepper with the cauliflower rice mixture, packing it tightly.
- Place the stuffed peppers upright in a baking dish and drizzle the remaining olive oil over them.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, until the peppers are tender and slightly charred.
- Garnish with fresh parsley before serving.
