Ingredients

  • 2 large bell peppers (any color) - 300g
  • 2 medium tomatoes - 250g
  • 200g cauliflower rice (fresh or frozen)
  • 50g feta cheese, crumbled
  • 30ml olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried mint
  • Salt to taste
  • Pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet, heat 15ml of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the cauliflower rice to the skillet and cook for 5-7 minutes until slightly tender.
  5. Dice the tomatoes and add them to the skillet along with dried oregano, dried mint, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.
  6. Remove the skillet from heat and mix in the crumbled feta cheese.
  7. Stuff each bell pepper with the cauliflower rice mixture, packing it tightly.
  8. Place the stuffed peppers upright in a baking dish and drizzle the remaining olive oil over them.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, until the peppers are tender and slightly charred.
  11. Garnish with fresh parsley before serving.
