Ingredients

  • Cauliflower rice - 300 grams
  • Greek yogurt (full-fat) - 100 grams
  • Cucumber (finely grated) - 50 grams
  • Garlic (minced) - 1 clove
  • Lemon juice - 1 tablespoon
  • Dill (fresh, chopped) - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the cauliflower rice by grating the cauliflower or using a food processor to achieve a rice-like texture.
  2. In a skillet, heat the olive oil over medium heat and add the cauliflower rice. Sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.
