Ingredients

  • Zucchini - 2 medium (about 400g)
  • Greek yogurt (full-fat) - 150g
  • Cucumber - 1 small (about 100g)
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50g, crumbled
  • Cherry tomatoes - 100g, halved

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles (zucchini noodles).
  2. In a mixing bowl, combine Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and black pepper to make the tzatziki sauce.
  3. Grate the cucumber and squeeze out excess moisture, then fold it into the tzatziki sauce.
  4. Heat olive oil in a skillet over medium heat and add the zoodles. Sauté for about 2-3 minutes until just tender.
