Ingredients

  • Almond flour - 120 grams
  • Mozzarella cheese (shredded) - 100 grams
  • Cream cheese - 30 grams
  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Greek yogurt (full-fat) - 100 grams
  • Cucumber (finely diced) - 50 grams
  • Garlic (minced) - 1 clove
  • Lemon juice - 1 tablespoon
  • Fresh dill (chopped) - 1 tablespoon
  • Cherry tomatoes (halved) - 100 grams
  • Feta cheese (crumbled) - 50 grams
  • Olive oil - for drizzling

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, shredded mozzarella cheese, cream cheese, egg, baking powder, oregano, garlic powder, and salt. Mix until a dough forms.
  3. Transfer the dough to the prepared baking sheet and spread it out into a flat, round shape, about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 12-15 minutes, or until golden brown.
  5. While the crust is baking, prepare the tzatziki sauce by mixing together the Greek yogurt, diced cucumber, minced garlic, lemon juice, and chopped dill in a small bowl. Season with salt to taste.
