  • Almond flour - 100 grams
  • Cream cheese - 50 grams, softened
  • Egg - 1 large
  • Dried oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Fresh dill - 1 tablespoon, chopped
  • Cucumber - 50 grams, finely grated
  • Greek yogurt (full fat) - 100 grams
  • Lemon juice - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Feta cheese - 50 grams, crumbled
  • Cherry tomatoes - 100 grams, halved

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, softened cream cheese, egg, dried oregano, garlic powder, salt, and pepper. Mix until a dough forms.
  3. Spread the dough onto the prepared baking sheet, shaping it into a round crust about 1 cm thick.
  4. Bake the crust in the preheated oven for 15 minutes or until golden brown.
  5. While the crust is baking, prepare the tzatziki sauce by mixing the Greek yogurt, grated cucumber, lemon juice, chopped dill, and a pinch of salt in a bowl.
  6. Once the crust is done, remove it from the oven and let it cool for a few minutes.
  7. Spread the tzatziki sauce evenly over the baked crust.
  8. Top with crumbled feta cheese and halved cherry tomatoes.
  9. Drizzle with olive oil and return to the oven for an additional 5 minutes to warm the toppings.
