Ingredients

  • Almond flour - 100g
  • Cream cheese - 100g
  • Eggs - 2 large
  • Feta cheese - 75g, crumbled
  • Mozzarella cheese - 75g, shredded
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, cream cheese, 1 egg, olive oil, oregano, salt, and black pepper. Mix until a dough forms.
  3. In a separate bowl, mix the crumbled feta and shredded mozzarella cheese.
  4. Divide the dough into two equal portions and flatten each portion into a round shape on a baking sheet lined with parchment paper.
  5. Spoon the cheese mixture onto one half of each round, leaving a small border around the edge.
  6. Fold the other half of the dough over the cheese filling to create a pocket and press the edges to seal.
  7. Beat the remaining egg and brush it over the top of each pastry to give it a golden color.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown.
  9. Remove from the oven and let cool for a few minutes before slicing and serving.
