- Coconut flour - 30g
- Baking powder - 1 tsp
- Eggs - 2 large
- Erythritol - 50g
- Unsalted butter - 30g, melted
- Almond milk - 60ml
- Vanilla extract - 1 tsp
- Orange zest - 1 tsp
- Ground mahleb - 1/2 tsp
- Ground mastic - 1/4 tsp (optional)
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a small loaf pan with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, baking powder, erythritol, ground mahleb, ground mastic (if using), and salt.
- In another bowl, whisk together the eggs, melted butter, almond milk, vanilla extract, and orange zest until well combined.
- Pour the wet ingredients into the dry ingredients and mix until you achieve a thick, cohesive dough.
- Transfer the dough to the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow the Keto Tsoureki to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
