Ingredients

  • Almond flour - 50g
  • Cream cheese - 30g
  • Mascarpone cheese - 100g
  • Heavy cream - 100ml
  • Erythritol - 30g
  • Espresso coffee - 60ml (cooled)
  • Cocoa powder - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a mixing bowl, combine almond flour, erythritol, and a pinch of salt.
  2. Add cream cheese and mix until well blended, then form the mixture into small biscuit shapes.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. In another bowl, mix mascarpone cheese, vanilla extract, and the whipped cream until smooth.
  5. Dip each almond flour biscuit briefly into the cooled espresso coffee and layer them at the bottom of serving dishes.
  6. Spread half of the mascarpone mixture over the biscuits and smooth it out.
  7. Repeat with another layer of coffee-dipped biscuits and top with the remaining mascarpone mixture.
  8. Refrigerate for at least 4 hours or until set.
  9. Before serving, dust the top with cocoa powder.
