- Almond flour - 50g
- Cream cheese - 30g
- Mascarpone cheese - 100g
- Heavy cream - 100ml
- Erythritol - 30g
- Espresso coffee - 60ml (cooled)
- Cocoa powder - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- In a mixing bowl, combine almond flour, erythritol, and a pinch of salt.
- Add cream cheese and mix until well blended, then form the mixture into small biscuit shapes.
- In a separate bowl, whip the heavy cream until soft peaks form.
- In another bowl, mix mascarpone cheese, vanilla extract, and the whipped cream until smooth.
- Dip each almond flour biscuit briefly into the cooled espresso coffee and layer them at the bottom of serving dishes.
- Spread half of the mascarpone mixture over the biscuits and smooth it out.
- Repeat with another layer of coffee-dipped biscuits and top with the remaining mascarpone mixture.
- Refrigerate for at least 4 hours or until set.
- Before serving, dust the top with cocoa powder.
