Keto Stuffed Peppers
These Keto Stuffed Peppers are a delightful twist on traditional Greek flavors, filled with a rich mixture of ground meat, feta cheese, and spices. Perfect for a low-carb diet, they are both satisfying and nutritious.

Ingredients
- 2 large bell peppers (any color)
- 250 grams ground lamb or beef
- 100 grams cauliflower rice
- 50 grams feta cheese, crumbled
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Add the ground lamb or beef to the skillet, cooking until browned, about 5-7 minutes.
- Stir in the cauliflower rice, oregano, thyme, salt, and pepper. Cook for an additional 5 minutes, mixing well.
- Remove the skillet from heat and fold in the crumbled feta cheese.
- Stuff each bell pepper with the meat and cauliflower mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. If desired, drizzle a little olive oil on top.
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
- Garnish with chopped parsley before serving.
