Ingredients

  • 2 large bell peppers (any color)
  • 250 grams ground lamb or beef
  • 100 grams cauliflower rice
  • 50 grams feta cheese, crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Add the ground lamb or beef to the skillet, cooking until browned, about 5-7 minutes.
  6. Stir in the cauliflower rice, oregano, thyme, salt, and pepper. Cook for an additional 5 minutes, mixing well.
  7. Remove the skillet from heat and fold in the crumbled feta cheese.
  8. Stuff each bell pepper with the meat and cauliflower mixture, pressing down gently to pack it in.
  9. Place the stuffed peppers upright in a baking dish. If desired, drizzle a little olive oil on top.
  10. Cover the dish with foil and bake in the preheated oven for 25 minutes.
  11. Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
  12. Garnish with chopped parsley before serving.
