Ingredients

  • Almond flour - 1 cup
  • Psyllium husk powder - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Egg - 1 large
  • Butter - 3 tablespoons, melted
  • Spinach - 200 grams, fresh
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Olive oil - 1 tablespoon
  • Dill - 1 tablespoon, fresh or 1 teaspoon dried
  • Black pepper - to taste
  • Egg - 1 for egg wash

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  3. Add in 1 egg and melted butter, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  5. In a skillet, heat olive oil over medium heat and sauté the spinach until wilted, about 3-5 minutes.
  6. In a bowl, combine the sautéed spinach, feta cheese, ricotta cheese, dill, and black pepper. Mix well.
  7. Remove the dough from the refrigerator and divide it into two equal parts.
  8. Roll out each part between two pieces of parchment paper to form thin rounds.
  9. Place one round on a parchment-lined baking sheet and add half of the spinach and cheese mixture in the center, leaving a border.
  10. Cover with the second round of dough, pressing the edges to seal.
  11. Brush the top with beaten egg for a golden finish.
  12. Repeat the process for the second serving.
  13. Bake in the preheated oven for 25-30 minutes, or until golden brown.
  14. Allow to cool slightly before slicing and serving.
