Ingredients
- Almond flour - 1 cup
- Psyllium husk powder - 1 tablespoon
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Egg - 1 large
- Butter - 3 tablespoons, melted
- Spinach - 200 grams, fresh
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Olive oil - 1 tablespoon
- Dill - 1 tablespoon, fresh or 1 teaspoon dried
- Black pepper - to taste
- Egg - 1 for egg wash
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
- Add in 1 egg and melted butter, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
- In a skillet, heat olive oil over medium heat and sauté the spinach until wilted, about 3-5 minutes.
- In a bowl, combine the sautéed spinach, feta cheese, ricotta cheese, dill, and black pepper. Mix well.
- Remove the dough from the refrigerator and divide it into two equal parts.
- Roll out each part between two pieces of parchment paper to form thin rounds.
- Place one round on a parchment-lined baking sheet and add half of the spinach and cheese mixture in the center, leaving a border.
- Cover with the second round of dough, pressing the edges to seal.
- Brush the top with beaten egg for a golden finish.
- Repeat the process for the second serving.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Allow to cool slightly before slicing and serving.
