Ingredients

  • Almond flour - 150g
  • Mozzarella cheese (shredded) - 100g
  • Cream cheese - 30g
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Olive oil - 1 tbsp
  • Chicken breast - 200g
  • Greek yogurt - 100g
  • Cucumber (grated) - 50g
  • Garlic (minced) - 1 clove
  • Lemon juice - 1 tbsp
  • Dried oregano - 1 tsp
  • Chili flakes - 1/2 tsp
  • Bell pepper (sliced) - 50g
  • Red onion (sliced) - 50g
  • Feta cheese (crumbled) - 30g
  • Fresh parsley (chopped) - 1 tbsp

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, and salt to form a dough.
  3. Place the dough on a parchment-lined baking sheet, spreading it into a round pizza shape about 1/2 cm thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. While the crust is baking, marinate the chicken breast with olive oil, dried oregano, salt, and chili flakes. Let it sit for about 10 minutes.
  6. Cook the marinated chicken in a pan over medium heat for 6-8 minutes until fully cooked. Remove from heat and slice.
  7. In a small bowl, prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt.
  8. Once the crust is done, remove it from the oven and spread a layer of tzatziki over the top.
  9. Top the pizza with sliced chicken, bell pepper, red onion, and crumbled feta cheese.
  10. Return the pizza to the oven for an additional 5 minutes to heat the toppings.
  11. Garnish with chopped fresh parsley before serving.
