Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower - 1 medium head
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, mix olive oil, minced garlic, lemon juice, oregano, paprika, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into bite-sized cubes and add them to the marinade. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, chop the cauliflower into florets and pulse in a food processor until it resembles rice.
  4. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.
  5. Heat a grill pan over medium-high heat. Thread the marinated chicken onto skewers and grill for about 10-12 minutes, turning occasionally until fully cooked.
  6. Once the chicken is cooked, serve it over the cauliflower rice, topping with crumbled feta cheese and fresh parsley.
