- Chicken breast - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cauliflower - 1 medium head
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, mix olive oil, minced garlic, lemon juice, oregano, paprika, salt, and black pepper to create a marinade.
- Cut the chicken breast into bite-sized cubes and add them to the marinade. Let it marinate for at least 15 minutes.
- While the chicken is marinating, chop the cauliflower into florets and pulse in a food processor until it resembles rice.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.
- Heat a grill pan over medium-high heat. Thread the marinated chicken onto skewers and grill for about 10-12 minutes, turning occasionally until fully cooked.
- Once the chicken is cooked, serve it over the cauliflower rice, topping with crumbled feta cheese and fresh parsley.
