Ingredients

  • Almond flour - 100 grams
  • Unsweetened cocoa powder - 20 grams
  • Erythritol - 30 grams
  • Butter - 50 grams, melted
  • Egg - 1 large
  • Dark chocolate (85% cocoa or higher) - 50 grams, chopped
  • Heavy cream - 100 ml
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 175°C (350°F) and grease a small pie dish.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. Add the melted butter and egg to the dry ingredients, mixing until a dough forms.
  4. Press the dough firmly into the bottom and up the sides of the prepared pie dish to form the crust.
  5. In a small saucepan, heat the heavy cream over medium heat until just simmering.
  6. Remove the saucepan from heat and add the chopped dark chocolate and vanilla extract, stirring until smooth and fully melted.
  7. Pour the chocolate mixture into the crust, spreading it evenly.
  8. Bake in the preheated oven for 15-20 minutes until the center is set but still slightly soft.
  9. Allow to cool for at least 10 minutes before slicing and serving.
