Ingredients

  • Shrimp (peeled and deveined) - 300g
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 200g
  • Feta cheese (crumbled) - 100g
  • Red pepper flakes - 1/2 teaspoon
  • Oregano (dried) - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
  4. Stir in the halved cherry tomatoes, red pepper flakes, and oregano. Cook for an additional 5 minutes until the tomatoes soften.
  5. Reduce the heat to low and crumble the feta cheese over the shrimp and tomatoes.
  6. Drizzle with lemon juice and season with salt and black pepper to taste.
  7. Cook for another 2-3 minutes until the feta is slightly melted and everything is well combined.
  8. Remove from heat and garnish with fresh parsley before serving.
