- Garlic (minced) - 2 cloves
- Cherry tomatoes (halved) - 200g
- Feta cheese (crumbled) - 100g
- Red pepper flakes - 1/2 teaspoon
- Oregano (dried) - 1 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
- Stir in the halved cherry tomatoes, red pepper flakes, and oregano. Cook for an additional 5 minutes until the tomatoes soften.
- Reduce the heat to low and crumble the feta cheese over the shrimp and tomatoes.
- Drizzle with lemon juice and season with salt and black pepper to taste.
- Cook for another 2-3 minutes until the feta is slightly melted and everything is well combined.
- Remove from heat and garnish with fresh parsley before serving.
