Ingredients

  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 400 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced red and green bell peppers and onion to the skillet. Sauté for about 5-7 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the canned diced tomatoes along with the ground cumin, paprika, salt, and black pepper. Mix well and let it simmer for 10 minutes, allowing the sauce to thicken.
  5. Make four small wells in the sauce and crack an egg into each well.
  6. Cover the skillet and let the eggs poach in the sauce for about 5-7 minutes, or until the whites are set but the yolks are still runny.
  7. Sprinkle the crumbled feta cheese and chopped parsley over the top before serving.
