- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 400 grams
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 4 large
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced red and green bell peppers and onion to the skillet. Sauté for about 5-7 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the canned diced tomatoes along with the ground cumin, paprika, salt, and black pepper. Mix well and let it simmer for 10 minutes, allowing the sauce to thicken.
- Make four small wells in the sauce and crack an egg into each well.
- Cover the skillet and let the eggs poach in the sauce for about 5-7 minutes, or until the whites are set but the yolks are still runny.
- Sprinkle the crumbled feta cheese and chopped parsley over the top before serving.
