- Almond flour - 100g
- Coconut flour - 20g
- Butter - 50g, melted
- Egg - 1 large
- Cream cheese - 100g, softened
- Feta cheese - 50g, crumbled
- Dried oregano - 1 tsp
- Salt - 1/4 tsp
- Black pepper - 1/4 tsp
- Egg wash (1 egg, beaten) - for brushing
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, coconut flour, melted butter, and 1 egg. Mix until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
- In another bowl, mix the cream cheese, crumbled feta cheese, dried oregano, salt, and black pepper until well combined.
- Remove the dough from the refrigerator and divide it into two equal portions.
- Roll out one portion between two sheets of parchment paper into a circle about 1/4 inch thick.
- Place half of the cheese mixture in the center of the dough circle, leaving a border around the edges.
- Fold the edges of the dough over the filling to create a pocket, pinching to seal tightly.
- Repeat with the second portion of dough and remaining filling.
- Brush the tops of the pockets with the beaten egg wash.
- Place the sfinzopita on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown.
- Remove from the oven and allow to cool slightly before serving.
