Ingredients

  • Almond flour - 100g
  • Coconut flour - 20g
  • Butter - 50g, melted
  • Egg - 1 large
  • Cream cheese - 100g, softened
  • Feta cheese - 50g, crumbled
  • Dried oregano - 1 tsp
  • Salt - 1/4 tsp
  • Black pepper - 1/4 tsp
  • Egg wash (1 egg, beaten) - for brushing

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, coconut flour, melted butter, and 1 egg. Mix until a dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  4. In another bowl, mix the cream cheese, crumbled feta cheese, dried oregano, salt, and black pepper until well combined.
  5. Remove the dough from the refrigerator and divide it into two equal portions.
  6. Roll out one portion between two sheets of parchment paper into a circle about 1/4 inch thick.
  7. Place half of the cheese mixture in the center of the dough circle, leaving a border around the edges.
  8. Fold the edges of the dough over the filling to create a pocket, pinching to seal tightly.
  9. Repeat with the second portion of dough and remaining filling.
  10. Brush the tops of the pockets with the beaten egg wash.
  11. Place the sfinzopita on a baking sheet lined with parchment paper.
  12. Bake for 20-25 minutes or until golden brown.
  13. Remove from the oven and allow to cool slightly before serving.
