Ingredients

  • Cauliflower rice - 200 grams
  • Coconut milk - 200 ml
  • Almond flour - 2 tablespoons
  • Erythritol (or preferred sweetener) - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Egg yolk - 1 large
  • Salt - a pinch
  • Lemon zest - 1 teaspoon

Steps

  1. In a medium saucepan, combine cauliflower rice and coconut milk over medium heat, stirring until well mixed.
  2. Add almond flour, erythritol, vanilla extract, ground cinnamon, and a pinch of salt to the mixture.
  3. Cook the mixture for about 10 minutes, stirring frequently, until the cauliflower is tender and the mixture thickens.
  4. In a small bowl, whisk the egg yolk and lemon zest together.
  5. Remove the saucepan from heat and gradually mix in the egg yolk, stirring constantly to avoid scrambling the egg.
  6. Return the saucepan to low heat for another 2-3 minutes, allowing the pudding to thicken further.
  7. Remove from heat and let it cool for a few minutes before serving.
