- Coconut milk - 200 ml
- Almond flour - 2 tablespoons
- Erythritol (or preferred sweetener) - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Egg yolk - 1 large
- Salt - a pinch
- Lemon zest - 1 teaspoon
Steps
- In a medium saucepan, combine cauliflower rice and coconut milk over medium heat, stirring until well mixed.
- Add almond flour, erythritol, vanilla extract, ground cinnamon, and a pinch of salt to the mixture.
- Cook the mixture for about 10 minutes, stirring frequently, until the cauliflower is tender and the mixture thickens.
- In a small bowl, whisk the egg yolk and lemon zest together.
- Remove the saucepan from heat and gradually mix in the egg yolk, stirring constantly to avoid scrambling the egg.
- Return the saucepan to low heat for another 2-3 minutes, allowing the pudding to thicken further.
- Remove from heat and let it cool for a few minutes before serving.
