- Onion - 1 medium, finely chopped
- Vegetable broth - 250 ml
- Dried oregano - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Begin by ricing the cauliflower using a food processor or grater until it resembles grains.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the riced cauliflower to the skillet, followed by the vegetable broth, dried oregano, salt, and pepper. Mix well.
- Cover the skillet and let it simmer for about 10-12 minutes, stirring occasionally until the cauliflower is tender and has absorbed the flavors.
- Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning if necessary.
- Serve warm, garnished with additional parsley if desired.
