Ingredients

  • Cauliflower - 400 grams, riced

  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Vegetable broth - 250 ml
  • Dried oregano - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Begin by ricing the cauliflower using a food processor or grater until it resembles grains.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the riced cauliflower to the skillet, followed by the vegetable broth, dried oregano, salt, and pepper. Mix well.
  5. Cover the skillet and let it simmer for about 10-12 minutes, stirring occasionally until the cauliflower is tender and has absorbed the flavors.
  6. Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning if necessary.
  7. Serve warm, garnished with additional parsley if desired.
