Ingredients

  • Almond flour - 150 grams
  • Eggs - 2 large
  • Erythritol sweetener - 50 grams
  • Baking powder - 1 teaspoon
  • Unsweetened Greek yogurt - 50 grams
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Salt - a pinch
  • Butter - 30 grams (melted)
  • Water - 100 ml
  • Erythritol (for syrup) - 30 grams
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, whisk together the eggs and erythritol until well combined and slightly frothy.
  3. Add the melted butter, Greek yogurt, vanilla extract, lemon zest, and a pinch of salt to the egg mixture. Mix until smooth.
  4. In a separate bowl, combine the almond flour and baking powder, then gradually fold it into the wet ingredients until just combined.
  5. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  6. Bake in the preheated oven for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the syrup by combining water, erythritol, and lemon juice in a small saucepan. Bring to a simmer, stirring until the erythritol dissolves. Simmer for about 5 minutes and then remove from heat.
  8. Once the cake is done, remove it from the oven and immediately pour the warm syrup over the hot cake. Allow it to absorb for about 10 minutes before slicing.
  9. Serve warm or at room temperature, optionally garnished with whipped cream or nuts.
