- Almond flour - 150 grams
- Eggs - 2 large
- Erythritol sweetener - 50 grams
- Baking powder - 1 teaspoon
- Unsweetened Greek yogurt - 50 grams
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Salt - a pinch
- Butter - 30 grams (melted)
- Water - 100 ml
- Erythritol (for syrup) - 30 grams
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F) and grease a small baking dish.
- In a mixing bowl, whisk together the eggs and erythritol until well combined and slightly frothy.
- Add the melted butter, Greek yogurt, vanilla extract, lemon zest, and a pinch of salt to the egg mixture. Mix until smooth.
- In a separate bowl, combine the almond flour and baking powder, then gradually fold it into the wet ingredients until just combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the syrup by combining water, erythritol, and lemon juice in a small saucepan. Bring to a simmer, stirring until the erythritol dissolves. Simmer for about 5 minutes and then remove from heat.
- Once the cake is done, remove it from the oven and immediately pour the warm syrup over the hot cake. Allow it to absorb for about 10 minutes before slicing.
- Serve warm or at room temperature, optionally garnished with whipped cream or nuts.
