Ingredients

  • Almond flour - 100g
  • Psyllium husk - 2 tbsp
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Egg - 1 large
  • Water - 60ml
  • Olive oil - 1 tbsp
  • Tomato sauce - 100g
  • Mozzarella cheese - 100g, shredded
  • Feta cheese - 50g, crumbled
  • Black olives - 30g, sliced
  • Red onion - 30g, thinly sliced
  • Bell pepper - 50g, diced
  • Oregano - 1 tsp

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
  3. Add the egg, water, and olive oil to the dry ingredients and mix until a dough forms.
  4. Divide the dough into two equal portions and shape each into a flat circle about 1 cm thick to form the pita bread.
  5. Place the pita bread on a baking sheet lined with parchment paper and bake for 10 minutes until lightly golden.
  6. Remove the pita bread from the oven and spread 50g of tomato sauce on each pita.
  7. Top each pita with shredded mozzarella cheese, crumbled feta cheese, sliced olives, red onion, and diced bell pepper.
  8. Sprinkle oregano on top of the pizzas.
  9. Return the pizzas to the oven and bake for another 10-15 minutes, until the cheese is bubbly and golden.
  10. Remove from the oven, allow to cool slightly, then slice and serve.
