- Almond flour - 100g
- Psyllium husk - 2 tbsp
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Egg - 1 large
- Water - 60ml
- Olive oil - 1 tbsp
- Tomato sauce - 100g
- Mozzarella cheese - 100g, shredded
- Feta cheese - 50g, crumbled
- Black olives - 30g, sliced
- Red onion - 30g, thinly sliced
- Bell pepper - 50g, diced
- Oregano - 1 tsp
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, psyllium husk, baking powder, and salt.
- Add the egg, water, and olive oil to the dry ingredients and mix until a dough forms.
- Divide the dough into two equal portions and shape each into a flat circle about 1 cm thick to form the pita bread.
- Place the pita bread on a baking sheet lined with parchment paper and bake for 10 minutes until lightly golden.
- Remove the pita bread from the oven and spread 50g of tomato sauce on each pita.
- Top each pita with shredded mozzarella cheese, crumbled feta cheese, sliced olives, red onion, and diced bell pepper.
- Sprinkle oregano on top of the pizzas.
- Return the pizzas to the oven and bake for another 10-15 minutes, until the cheese is bubbly and golden.
- Remove from the oven, allow to cool slightly, then slice and serve.
