Ingredients

  • Cauliflower rice - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Dill - 1 tablespoon, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and minced garlic, and sauté until the onion is translucent.
  3. Stir in the diced red bell pepper and continue to cook for another 3-4 minutes.
  4. Add the cauliflower rice to the skillet and mix well, cooking for about 5 minutes until slightly tender.
  5. Incorporate the fresh spinach and cook until wilted.
  6. Season the mixture with dill, oregano, salt, and pepper.
  7. Remove from heat and fold in the crumbled feta cheese.
  8. Serve warm, garnished with additional dill if desired.
