Ingredients

  • Almond flour - 100 grams
  • Coconut milk - 200 ml
  • Erythritol - 40 grams
  • Gelatin powder - 10 grams
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - a pinch
  • Chopped walnuts - 30 grams (for topping)

Steps

  1. In a small saucepan, combine the coconut milk, erythritol, and a pinch of salt over medium heat. Stir until erythritol dissolves.
  2. In a separate bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
  3. Once the coconut milk mixture is warm (but not boiling), add the bloomed gelatin and stir until completely dissolved.
  4. Remove from heat and mix in the almond flour, vanilla extract, and cinnamon until well combined.
  5. Pour the mixture into serving dishes and refrigerate for at least 2 hours or until set.
