- Almond flour - 100 grams
- Coconut milk - 200 ml
- Erythritol - 40 grams
- Gelatin powder - 10 grams
- Vanilla extract - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - a pinch
- Chopped walnuts - 30 grams (for topping)
Steps
- In a small saucepan, combine the coconut milk, erythritol, and a pinch of salt over medium heat. Stir until erythritol dissolves.
- In a separate bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.
- Once the coconut milk mixture is warm (but not boiling), add the bloomed gelatin and stir until completely dissolved.
- Remove from heat and mix in the almond flour, vanilla extract, and cinnamon until well combined.
- Pour the mixture into serving dishes and refrigerate for at least 2 hours or until set.
