Ingredients

  • Eggplant - 1 medium, sliced
  • Olive oil - 2 tablespoons
  • Ground beef or lamb - 250 grams
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Eggs - 2 large
  • Heavy cream - 100 ml
  • Grated Parmesan cheese - 50 grams
  • Mozzarella cheese - 100 grams, shredded

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and brush both sides with olive oil. Place them on a baking sheet and roast in the oven for 20 minutes until soft and slightly golden, flipping halfway through.
  3. In a skillet over medium heat, add the remaining olive oil. Sauté the diced onion until translucent, then add the minced garlic and cook for an additional minute.
  4. Add the ground beef or lamb to the skillet, cooking until browned. Stir in the tomato paste, oregano, cinnamon, salt, and pepper. Mix well and let simmer for about 5 minutes.
  5. In a bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until well combined to create the béchamel sauce.
  6. In a baking dish, layer half of the roasted eggplant slices on the bottom. Spread the meat mixture evenly over the eggplant, followed by the remaining eggplant slices.
  7. Pour the béchamel sauce over the top layer of eggplant, and then sprinkle shredded mozzarella cheese on top.
  8. Bake in the oven for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven, let it cool slightly, then slice and serve.
