- Eggplant - 1 medium, sliced
- Olive oil - 2 tablespoons
- Ground beef or lamb - 250 grams
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
- Eggs - 2 large
- Heavy cream - 100 ml
- Grated Parmesan cheese - 50 grams
- Mozzarella cheese - 100 grams, shredded
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and brush both sides with olive oil. Place them on a baking sheet and roast in the oven for 20 minutes until soft and slightly golden, flipping halfway through.
- In a skillet over medium heat, add the remaining olive oil. Sauté the diced onion until translucent, then add the minced garlic and cook for an additional minute.
- Add the ground beef or lamb to the skillet, cooking until browned. Stir in the tomato paste, oregano, cinnamon, salt, and pepper. Mix well and let simmer for about 5 minutes.
- In a bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until well combined to create the béchamel sauce.
- In a baking dish, layer half of the roasted eggplant slices on the bottom. Spread the meat mixture evenly over the eggplant, followed by the remaining eggplant slices.
- Pour the béchamel sauce over the top layer of eggplant, and then sprinkle shredded mozzarella cheese on top.
- Bake in the oven for an additional 15-20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let it cool slightly, then slice and serve.
